What I have for breakfast (lazy edition)

Hey everyone! I decided to share what I usually eat for breakfast when I feel lazy or if I’m feeling mentally low when I wake up. I usually for breakfast have something on a bigger scale ranging from protein to fiber.
Since the self-isolation period begun, it had given me opportunities to change how I eat in a day. After beginning to eat healthier, it not only made me feel good about myself, but also, I had more energy to get things done in the day. I’m not necessary a picky eater, instead I am always open to trying to new things out in order to understand what cuisines are particularly enjoy more than others.
Now let me show you what I usually eat on a very lazy and mentally draining morning.
Pancakes
On a regular day, I do prefer to have a nutritious breakfast. However, there are moments when I do crave things on the sweet sides.
I enjoy making various pancakes depending on how I am feeling either emotionally. For instance, when I am feeling a bit depressed, I prefer to start my day with either blueberry pancake or a cinnamon & oats pancake.

This pancake contained sliced blueberries, blackberries and raspberries. To top it off, instead of using maple syrup, I decided to use natural honey for more of a distinct sweet taste. You could use self-rising flour and baking powder if you prefer your pancakes to be fluffy. However, when I feel lazy, I prefer my pancakes to be flat yet light and fluffy on the inside. So, I do recommend substituting self-rising flour and baking powder with 3 tablespoon of plain flour and 1 tablespoon of potato starch. Still trying to keep things a bit healthy, I Had it with a bowl of sliced apples and a glass of ice water. I do try to drink 2 cups of water with breakfast.

Another way I enjoy having pancakes on these types of days is mixing in teaspoon cinnamon and oats with the plain flour. This is optional but I also add a tablespoon of maple syrup. I added around the pancakes fresh sliced strawberries and blueberries with a bowl of apples. Topped with a light drizzle of honey, because with the cinnamon and maple syrup in the pancakes, I don’t want to make it too sweet. The tea I had with it was Heath & Heathers Organic Bright & Fruity Morning Tea. I tend to have this tea every morning in general due to its organic ingredients being known for their therapeutic and rejuvenating properties. To top it off, a glass of dalgona coffee. I find it very fun to make.
Simple

There are the worse mornings where my self-esteem is very low, and I tend to feel very depressed. Therefore, I make simple breakfasts like this just to make sure that I have eaten something. This bowl contains natural low-fat Greek yogurt with granola, pecans, hazelnuts and blueberries. The reason I added blueberries because not only is it high in nutrients, but it supports the heart and contains vitamin C.
Every meal I eat is always different depending on my emotional and mental health, rather than what I am craving and things. So hopefully you could relate to this post.
